Preparing egg scrambles is a good way to use the leftover veggies.
Ingredients:
2 cups chopped Kale
3-4 grape tomatoes sliced in half
2 tsp extra virgin olive oil
2 whole eggs scrambled
Instructions:
Cook Kale and tomato with the olive oil until the kale softens. Then, pour the scrambled eggs into the pan and cook everything together.
3. Spinach and Feta Scramble
Ingredients:
2 cups baby spinach
2tsp extra virgin olive oil
2 whole eggs scrambled
2tbsp feta cheese
Instructions:
Sautee the baby spinach in the olive oil until it softens. Add the scrambled eggs into the pan and top with feta cheese when done.
