4. Asparagus and Scallion Scramble
Ingredients:
2 cups frozen asparagus spears diced into bite sized pieces
2tsp Extra Virgin Olive Oil
1 scallion diced
2 whole eggs scrambled
Instructions:
Saute the asparagus in olive oil and then add the scallion and the scrambled eggs. Cook for a while and season.
5. Eggs with Scallion and Avocado
Ingredients:
1 scallion diced
2 whole eggs scrambled\
2tsp Extra Virgin Olive Oil
¼ avocado diced
Instructions:
Cook the scallion and the scrambled eggs and top with diced avocado when done.
6. Broccoli Egg Bake
The best part about this recipe is that it can be prepared in advance and reheated when needed.
Ingredients:
1 Bag frozen organic Broccoli
8 eggs
4 egg whites
1 ½ cups organic 2% milk fat cottage cheese
Instructions:
Preheat the oven to 350
Put the broccoli in a microwave for 4 minutes and squeeze the excess water
Mix the eggs with cottage cheese
Place the broccoli in a baking pan
Pour the eggs over and bake for about half an hour
Allow it to cool and cut into 8 pieces
